PKK: Cookie Tube

Once upon a time there was a little girl named Princess Kaitlyn. She lived in a beautiful castle, by an enchanted forest, a magical lake, and a fantastically fun playground. As Princess Kaitlyn skipped down to the magical lake to see her friend Mariana, she wondered if the water would be too cold to go swimming since spring just sprung. She reached the lake and stuck a toe in the water - brrrrr!!!

Princess Kaitlyn really wanted to visit with Mariana, so she devised a new plan to get to the center of the magical lake. She would make an inner tube to float on the lake and visit her mermaid friends.

She ran to the forest and picked a bushel full of strawberries. Then she ran back to the castle kitchen and whipped up some butter cookie dough and made the biggest cookie she ever imagined in the shape of a donut. Then she filled the center with a delicious strawberry filling she made from the bushel of strawberries. Since the strawberries came from the enchanted forest, magic butterfly dust would make it strong enough to hold Princess Kaitlyn. Princess Kaitlyn baked her giant cookie in the huge castle pizza oven (her regular oven wasn't big enough) and sprinted joyfully back to the magical lake. She placed her cookie tube in the lake and called out to her friend Marianna.

Despite everyone wanting to eat her cookie tube, including Princess Kaitlyn, she had a fantastic day playing on top of the lake with Marianna and her friends.


Kaitlyn decided to sit on the island when mommy wasn't looking. Silly goose!!

First Soccer Practice

Just thought we'd share some photos of Kaitlyn's first soccer practice. While daddy reported that Kaitlyn still had her shy persona on during practice, she came home enthusiastic and ready to show me everything she learned. She said she can't wait to go back. Enjoy!

PKK: Berryshroom Muffin Tops

Once upon a time there was a little girl named Princess Kaitlyn. She lived in a beautiful castle by an enchanted forest, a magical lake, and a fantastically fun playground. One sunny, bright day as Princess Kaitlyn walked around the magical lake and through the scrumptious garden she noticed a field of mushrooms growing behind the garden. While field had the typical brown and white mushrooms and all shades in between, she also saw some colorful mushrooms right in the center.

Every time the wind blew, the colorful mushrooms tops flipped open and revealed something inside. As Princess Kaitlyn drew closer, she realized that the colorful mushrooms held pieces of fruit (blackberries, raspberries, or blueberries). She decided to call these colorful mushroom berryshrooms.

Princess Kaitlyn paid careful attention when the wind blew and noticed that several berryshrooms tops did not blow open. She realized that they were fully grown and ready to be picked. So, Princess Kaitlyn picked a bunch of berryshrooms and headed back to the castle where she made her berryshroom mushroom tops.

These berry muffin tops were made of A-P flour, cornmeal, dried cherries, cranberries and blueberries and other basic muffin ingredients.
They only have 109 calories per top in a batch of 22.

Life is Good!

On this very rainy day, you could find the four of us relaxing on the couch watching a 'Kaitlyn' movie - no scary parts, all nice characters, no mystery or suspense, etc. :-) Couldn't resist this photo opp. Life is good!
