Princess Kaitlyn's Kitchen: Popsicle Park
Once upon a time there was a little girl named Princess Kaitlyn. She lived in a beautiful castle by an enchanted forest, a magical lake, and a fantastically fun playground. One morning, Princess Kaitlyn awoke to bright rays of sunshine sparkling it's yellow glow around her room. She jumped out of bed and knew exactly what adventure she would embark on this particular day.
Princess Kaitlyn headed towards the fantastically fun playground where she would meet the boisterous butterflies from the enchanted forest. Upon arriving, Princess Kaitlyn noticed that the playground looked different. It glistened in the sunlight and shed drops of colorful liquid onto the ground. What's going on? wondered Princess Kaitlyn.
As Princess Kaitlyn walked up to the monkey bars, one boisterous butterfly explained that they turned the playground into Popsicle Park for the day because of the hot weather. The slides were orange and coconut creamsicles, the climbing wall made of fudgesicles, the monkey bars looked like bomb pops (red, white and blue rocket shaped popsicle), and the bridges made of push up popsicles. "Awesome!" Princess Kaitlyn exclaimed. She had never played in a popsicle park before.
After a fun and sticky day of playing in Popsicle Park, Princess Kaitlyn ventured back to the castle and straight to her kitchen to make a little something for the boisterous butterflies. Do you know what she made... POPSICLES!
Princess Kaitlyn decided to make two different kinds of popsicles...
Orange Creamsicle (semi-healthy)
AND
Root Beer Float Popsicles
Princess Kaitlyn added the ingredients to the blender.
She tasted her concoction to determine if it needed extra root beer or ice cream - nope!!
Princess Kaitlyn decided it tasted 'just right' and opened the sprinkles, but oops...
Even messes get made in Princess Kaitlyn's kitchen!
Princess Kaitlyn added sprinkles to her root beer popsicles.
Now Princess Kaitlyn gets ready to put them in the freezer for a six hours. She also drinks the leftovers - tasty!!
Next Princess Kaitlyn makes the orange creamsicle popsicles. These have healthier ingredients - no sugar, no honey, and no ice cream. Princess Kaitlyn asks mommy if this is a good idea and her mommy assures her that they'll taste great!
Princess Kaitlyn adds the yogurt, followed by orange juice, vanilla, and orange oil.
The ingredients are blended, now it;s time for the popsicle molds.
Princess Kaitlyn adds the popsicle sticks and into the freezer they go.
It's time to eat...let's try the root beer popsicle first!
"Cheers daddy!"
"Are these delicious enough for my butterfly friends daddy?"
Taste testing the orange creamsicle popsicle. Tastes good, but Princess Kaitlyn likes the root beer popsicle better!
Side note: the orange creamsicle is good, however, it would taste much better with real cream and sugar or vanilla ice cream. Obviously, won't be as good for you!

Princess Kaitlyn's Kitchen: Peanut Butter Brownies for Mariana
Once upon a time there was a little girl named Princess Kaitlyn and she lived in a beautiful castle by an enchanted forest, a magical lake, and a fantastically fun playground. Princess Kaitlyn loved swimming in the magical lake with Mariana the mermaid and her friends. After an especially fun day visiting the underwater mermaid kingdom, Mariana mentioned that she was hungry. Being tired of eating seafood, Mariana wished for a decadent treat to share with Princess Kaitlyn and her friends. Princess Kaitlyn silently snuck away from the mermaid kingdom to go home and make peanut butter iced brownies (semi-homemade this time around) for Mariana and her friends. Talk about yummy in your tummy!!
Brownie Recipe
Princess Kaitlyn mixing the brownie batter. She added some chocolate chips to make it extra decadent!
Princess Kaitlyn tastes the peanut butter buttercream icing... it passes the taste test with flying colors!
Princess Kaitlyn's finished product. Princess Kaitlyn helped spread the icing on the brownies and her mommy piped a little creamed peanut butter on top. Yum!!!
Princess Kaitlyn shared the brownies with Mariana and her mermaid friends (really her school classmates). Mariana enjoyed the treat so much that she gave Princess Kaitlyn a big hug and special telephone seashell to take home with her to the castle.Brownie Recipe

- Semi-sweet Chocolate chips - add to brownie mix before baking
- Crisco shortening

Princess Kaitlyn's Kitchen: Ferbur's Special Treat
Once upon a time there was a little girl named Princess Kaitlyn who lived in a beautiful castle by an enchanted forest, a magical lake, and a fantastically fun playground. One day Princess Kaitlyn ventured into the forest and met a talking squirrel named Ferbur. He invited her to his grand ole tree house for nuts and tea. Princess Kaitlyn had such a nice visit with Ferbur that upon returning home, she decided to make him a special treat of nuts, dried fruit, and pretzels covered in white and dark chocolate. Yum!!
Ferbur's Special Treat
Ingredients
Laying out the white chocolate treat on a parchment lined baking sheet to harden in the refrigerator.
Princess Kaitlyn mixing dried cherries, almonds, peanuts, and pretzels in dark chocolate.
Laying out the dark chocolate treat on a parchment lined baking sheet to harden in the refrigerator.
After the chocolates hardened (placed in fridge), we mixed them together for Ferbur and Princess Kaitlyn to share. Granted Princess Kaitlyn's mommy and daddy also had several pieces of Ferbur's special treat.
Tip... the white chocolate tasted the best. If we make Ferber's special treat again, we'll either do all white chocolate or white and milk chocolate. The dark chocolate just wasn't as tasty (and we love dark chocolate in our house).

Ferbur's Special Treat
Ingredients
- Pretzels
- Dried fruit (cherries and raisins)
- Nuts (almonds and peanuts)
- Hershey's white chocolate chips
- Hershey's Special dark chocolate Chips (used here, but recommend white over these)
- Melt the chocolate (separately if using two kinds) in a double boiler or in the microwave. While melting, mix the pretzels, dried fruit and nuts in a bowl. Pour/scrape the melted chocolate over the pretzels, nuts and fruit. Stir quickly before chocolate hardens and cover each piece with chocolate. Pour out onto a parchment lined baking sheet to harden - pour it flat, otherwise items dry on top of each other and stick. Place in refrigerator to harden chocolate. Place in air tight container after chocolate hardens.

Happy Independence Day!
Happy Independence Day!!
As is the story these days, it was hot, hot hot!!! We went outside in the morning and by the time we headed inside before eleven o'clock, Kaitlyn was thirsty!
Kaitlyn played soccer with Uncle Tim. Although she made it much harder for him by making him stand behind the goal.
