Pa's Visit in September

Pa Mark came to visit us in September. Here are some fun pics from the visit with our girls. For once, we gave Pa a break and didn't have a home improvement project we needed help with and enjoyed a relaxing, nice visit instead.








While I love this photo, the nap was short lived for Pa. Right after I snapped the shot, I noticed Kaitlyn in our hallway with a cup of water. As I watched her, I saw that she was spitting water on our wood floors. Despite mommy trying to loudly whisper at Kaitlyn to stop, it still woke up Pa Mark. Ahhh...three year olds...so fun! :-)

PKK: Oatmeal Cookies

Once upon a time there was a little girl named Princess Kaitlyn. She lived in a beautiful castle by an enchanted forest, a magical lake, and a fantastically fun playground. One day she pranced over to the castle stable to visit her horse, Coupa. Princess Kaitlyn and Coupa went for a ride to the enchanted forest and galloped straight to a field of oats. Coupa like to pick the oat straws and use his mouth to hand them to Princess Kaitlyn. Coupa picked so many oats that Princess Kaitlyn had a full bouquet in no time.

Princess Kaitlyn love picking oats in this field because their enchanted properties made for the the BEST oatmeal cookies in the kingdom! In Princess Kaitlyn's kingdom, all she had to do was wave her wand, say abra-cadabra, and poof... oatmeal cookies galore made right there in the enchanted forest.


Sometimes though, Princess Kaitlyn would take the oat straws back to the kingdom so she could make oatmeal cookies with her Pa in the castle kitchen.














Running short on time to update. Will try to post the recipe another time. However, if you plan to make oatmeal cookies...I recommend raisins or fruit over chocolate chips as some tart/fruit flavor is needed to mesh with the oats and cinnamon (Pa agreed too!).

Madelyn absolutely refuses pacifiers despite mommy and daddy's attempts to give them to her. As you can see, it appears she's going to be a thumb girl.

This is Kaitlyn finishing her slice of 'go blue' cake. And no, I swear she did not learn this from mommy or daddy!

PKK: Hummus & Pita Chips

It's Princess Day...

Once upon a time there was a little girl named Princess Kaitlyn. She lived in a beautiful castle by an enchanted forest, a magical lake, and a fantastically fun playground. Princess Kaitlyn loved to dance and twirl to any kind of music.
One day as she walked through the enchanted forest, she noticed the blue birds singing a wonderful melody. Upon reaching a grassy field filled with whipsy wheats and grain strands and mounds of light brown dirt, Princess Kaitlyn started to dance.
The blue birds enjoyed her dancing so much, that they continued to sing. Soon Princess Kaitlyn's friends Ferber the squirrel, Cookie Piepea the Bear, the boisterous butterflies and the jack rabbits joined her after hearing the wonderful bird songs. Princess Kaitlyn and her animal friends from the enchanted forest danced all day long stomping over the mounds of soft sand (like crushing chick peas for hummus) and twirling in and out of the wheat strands (pita chips).
Ingredients for Hummus
  • Chick peas (2 cans)
  • Extra Virgin Olive Oil
  • Tahini (sesame paste)
  • 1 clove garlic
  • 1 lemon juiced
  • Ground cumin (~1 teaspoon)
  • Pita chips cut into triangles

First, Princess Kaitlyn preheated the oven to 350 degrees and brushed her pita chips with olive oil to make them nice and crispy.

Next Princess Kaitlyn combined all the ingredients minus the pita chips into a food processor. (Cook's Illustrated recommends adding oil to well mixed tahini and adding it after everything else has been processed into a paste like texture.)

This is the tahini on top of the rest of the ingredients. Neither Princess Kaitlyn or mommy have used tahini before.

Princess Kaitlyn processed the hummus until it was nice and smooth. We tasted and added oil and lemon juice as needed until Princess Kaitlyn approved the final product.

Funny story... the pita chips didn't get crispy enough, so while Kaitlyn napped, mommy decided to put them back in the oven. Bad idea!! Mommy got distracted and forgot about them. Let's just say the turned very brown. Thankfully, we had some store bought pita chips in the pantry. Mommy just poured some of those on the baking sheet during nap time. Kaitlyn probably enjoyed those better anyway!

PKK: Go Blue Cake

Once upon a time there was a little girl named Princess Kaitlyn. She lived in a beautiful castle by an enchanted forest, a magical lake, and a fantastically fun playground. Princess Kaitlyn and her family loved to watch Michigan football in the castle movie on a gigantic television screen. When Michigan scored a goal, Princess Kaitlyn yelled "touchdown!" and sang "Hail to the Victors." For a special treat for game day, Princess Kaitlyn made a go blue cake with her mommy and daddy. Everyone enjoyed the family time and the results of our efforts. The cake didn't last long in Princess Kaitlyn's castle!!

Note on cake: Princess Kaitlyn's mommy had a yellow cake recipe from American's Test Kitchen (Cook's Illustrated Affiliation) that she wanted to try, but daddy wanted chocolate cake. So...we settled on marble cake. It turned out to be a rather fun process!

For the bakers out there... the yellow cake has you beat egg whites with sugar until they form a stiff peak and fold into the rest of the batter. It's very different from most cakes, I've made.

This yellow cake recipe is a keeper. We had some leftover, so mommy made a small yellow cake. It tasted pretty good and had a nice balance of crumbiness to moistness - yum!!
