In the last blog I noted that Food and Wine's recipe for Blue Cheese dressing for our hot wings turned out great. I didn't realize that Go Blue dad altered it slightly, so here's the version we made:
1/2 cup mayonnaise
1/2 cup sour cream
1/4 pound blue cheese (crumbled or cut from a block; ~ 1 cup)
2 scallions (white and green parts chopped)
1 teaspoon white distilled vinegar
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Combine all ingredients in a glass bowl and mix together well. Refrigerate for at least 1/2 hour to allow flavors to blend. Serve with hot wings, celery sticks, carrot sticks or whatever floats your boat!
