If you're looking for a vegetarian dish for dinner, this recipe is pretty good as long as you like mushrooms!

We usually try to eat a vegetarian dish once a week, so we're always looking for interesting recipes. This recipe is hearty and robust and does not leave you feeling hungry. If you incorporate wheat pasta as well, you should be very pleasantly full.
We used the dried porcini mushrooms per the recipe and baby portabella mushrooms (our favorite kind). As noted before, it was a very hearty dish, but definitely full of mushroom flavor. If you're not a fan a mushrooms, this dish is probably not for you. Unfortunately, we fall into that category of not caring much for mushrooms.
However, we may try to make this dish again by omitting the porcini mushrooms and mushroom 'broth' and using just baby portabella mushrooms and a vegetable or beef stock.
